Bison Filet Mignon with Crispy Fries and a Balsamic Vinaigrette


Today, we want to show you one of our favorite bison recipes, complete with sides! Many have asked to include some of the recipes for the sides we make, and we deliver!


Today, filet mignon with crispy fries, and a small side salad.




Ingredients:


Filet:

  • 6-8 oz. bison filet mignon

  • salt and pepper to taste

  • 1 tablespoon olive oil

  • 3 tablespoons unsalted butter

  • 2 sprigs of fresh rosemary (or 2 tablespoons of rosemary leaves)

  • 2 cloves garlic


Fries:

  • 3 Yukon potatoes (peeled and sliced)

  • Salt and pepper to taste (or old bay!)

  • Olive Oil


Salad:

  • Salad mix, or arugula, kale, spinach, and lettuce

  • 1/2 cup extra virgin olive oil

  • 3 tablespoons balsamic vinegar (you can also use red-wine vinegar for a different taste!)

  • 1 table soon dijon mustatd

  • 1 tablespoon honey

  • 2 cloves garlic (minced)

  • Salt and pepper to taste


Instructions:


Filet:

  1. Pat the filet with paper towels after letting the cut sit for 20-30 minutes at room temperature

  2. Preheat the oven to 450˚F

  3. Generously season the filet with salt and pepper

  4. Heat a cast iron pan until until hot, and add the 1 tablespoon olive oil

  5. After the oil is smoking, add the filet mignon to the pan for 2-3 minutes per side

  6. After the sides have been seared, add the butter, rosemary, and garlic to the pan

  7. Spoon the melted butter, rosemary, and garlic over the filets for 2-3 minutes

  8. Transfer the cast iron pan to the oven until it reaches 5-10 degrees below the desired temperature (see below for temperatures)

  9. Transfer to a warm plate and tent with foil for 5-10 minutes

  10. Serve and enjoy!


Rare: 115-120 degrees Medium Rare: 121-129 degrees Medium: 129-135 degrees



Fries:

  1. Cut the fries into wedges, or pommes frites (the typical french fry shape)

  2. Place the cut potatoes into a bowl with cold water (make sure they're completely submerged)

  3. Let fries sit for about 1 hour to remove starch and add ultimate crisp!

  4. Drain the water and pat the fries dry with a paper towel

  5. Toss in oil, salt, and pepper (or old bay and oil!)

  6. Cook:

    1. If using air fryer, pre-heat to 375°F and add fries to the airfryer (try not to double-stack), and cook for 13 minutes. Some airfryers also have a 'french fry' button that works fantastically as well. We recommend shaking the fries half way in between.

    2. If using an oven, pre-heat the oven to 375°F and spread the fries evenly on a single layer on a pan. Bake for 20 minutes, then turn up the oven to 425°F, flip the fries, and bake for another 20-25 minutes.

  7. Serve and enjoy!

Salad:

  1. Combine your spinach, arugla, kale, etc. in a bowl

  2. Combine the salad dressing ingredients in a separate bowl (olive oil, vinegar, dijon mustard, honey, garlic, and salt/pepper to taste)

  3. Toss the salad and salad dressing

  4. Serve and enjoy!
