Bison Filet Mignon with Lemon Garlic Sauce is a luxurious and flavorful dish that is perfect for a special occasion. The bison filet mignon is a lean and tender cut of meat that is paired perfectly with the bright and citrusy lemon garlic sauce. This dish is sure to impress your guests and leave them wanting more.

Ingredients:
1lb (~2 filets) of bison
The juice of 2 lemons
4 garlic cloves, finely chopped
1 tablespoon flour (more if you like a thicker sauce)
1 cup beef broth
1 shallot, finely chopped
2 tablespoons butter
2 tablespoons fresh rosemary, finely chopped
2 tablespoons olive oil
Salt
Pepper
Directions:
Preheat a cast iron to medium-high heat and add olive oil and preheat your oven to 200F.
Place steaks on the grill on medium heat to sear the filet.
Cook until browned, 4-5 minutes, and flip.
Transfer to the oven and wait until it reaches around 110F, then rest for 10 minutes.
Make your sauce -- In a saucepan on medium heat, the butter and shallots and stir until the butter melts and the shallots turn translucent.
Add the garlic, rosemary, and lemon, then let simmer for 2 minutes.
Add around 3/4 of the beef broth to the butter mixture and let simmer.
In a small bowl, place the remainder of the beef broth and 1 tablespoon flour and mix well until there are no chunks of flour then pour into the saucepan.
Whisk the saucepan ingredients until it thickens.
Drizzle the lemon rosemary garlic sauce over the steaks and serve.
