At JJ Bison, we wanted to explore how we could utilize bison in traditional and different dishes from around the world. While we will continue making traditional recipes like filet mignon, we want to show how much fun you can have with a heart-healthy alternative to beef.
Ingredients:
For the Steaks:
Top Round Steaks
1-1/2 cups panko bread crumbs
3 tablespoons melted butter
2 tablespoons finely chopped fresh parsley
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
Slaw:
2 cups shredded cabbage
1/4 cup apple cider vinegar
1/4 teaspoon salt
1/3 teaspoon pepper
Directions:
Preheat oven to 425°F. Combine and consolidate panko crumbs, butter, parsley, paprika, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
One at a time, press the bison filet firmly into the crumb mixture to coat all sides
Place on a shallow and greased baking pan. Repeat with remaining steaks. If you do have any extra mixture, make sure to use the crust on top of the bison.
Bake 10 minutes.
While the bison is cooking, prepare the slaw. Heat a nonstick skillet over medium-high heat until hot. Add cabbage and vinegar and cook for about 5 minutes. Season with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
Serve schnitzel with slaw. - Enjoy!
