This lemon sauce with rosemary, garlic, and lemon is the perfect way to add a bright, flavorful, and slightly acidic touch to your favorite grilled, pan-fried, or roasted bison steak. The lemon juice helps to tenderize the meat, while the rosemary and garlic add a delicious herbaceous and garlicky flavor. This sauce is also great for drizzling over fish, chicken, or vegetables, but you'll want to save it for the bison!
Ingredients:
16 oz of JJ Bison sirloin (cut into 2, 8oz steaks)
3 tablespoons lemon juice (or the juice of 1 lemon)
4 garlic cloves, minced
2 tablespoons flour
3/4 cup beef broth, reserve 2 tablespoons.
1 shallot, minced
1 tablespoon butter
2 tablespoons rosemary
3 tablespoons olive oil
Directions:
Turn the heat on the pan to medium-high and sear your steaks using the butter.
Continue cooking until it reaches ~5-10 degrees under your desired temperature and then let it rest under foil.
Meanwhile, in a saucepan heat, add the shallots and butter until the shallots become translucent.
Add the garlic, rosemary, olive oil, and lemon. Let simmer for 2 minutes on medium-high, and then add the beef broth.
Add the flour to a small bit of reserved beef broth and mix together to form a paste (to avoid clumps).
Pour the paste into the saucepan and let reduce and thicken for 2-3 minutes while stirring.
Remove your steaks from resting and serve with the sauce on top.
