Bison Stir-Fry: The Secret to a Savory, Diabetic-Friendly Meal

Bison is a lean and healthy protein source that is low in saturated fat and calories. It is also a good source of iron and zinc. Stir-frying is a healthy cooking method that uses high heat to quickly cook vegetables and meat, preserving their nutrients and flavor.


In this blog post, we will share a recipe for bison stir-fry that is both delicious and diabetic-friendly. We will also provide tips for cooking bison and choosing the right vegetables for your stir-fry.


Ingredients:

Sauce:

  • 1/2 cup low-sodium soy sauce

  • 1/2 cup low-sodium beef stock

  • 2 teaspoons sesame oil

  • 1/2 teaspoon rice vinegar

  • 4 cloves minced garlic

  • 2 teaspoons grated ginger

  • 1 tablespoon honey

Stir Fry Mix:

  • 2 cups Snow peas

  • 3 julienned carrots

  • 2 eggs

  • 1 bag coleslaw mix

  • 1 cup brown rice

  • 1lb ground bison

  • 2 red peppers, minced

  • 1 white onion, minced

  • 1 tablespoon sesame oil

  • Salt and pepper to taste


Directions:

  1. In a pot, combine the stirfry sauce ingredients and turn the heat on low (make sure to watch for over-boiling!)

  2. Make the rice according to its instructions.

  3. In a big pan on medium heat, add the pound of ground bison and cook until it reaches 165F. Season with salt and pepper.

  4. Remove the meat, turn the pan to low, crack 2 eggs, and scramble in the pan, season with salt and pepper.

  5. Remove the eggs and add them with the meat on a separate plate.

  6. Change the heat to medium and add the vegetables to the pan with 1 tablespoon of sesame oil. Stir until veggies are cooked.

  7. Add the rice, eggs, and bison to the pan with the veggies and stir, then add the stirfry sauce and stir again until well combined.

  8. Remove from heat and serve.
