Taco Tuesday is a favorite in my household. Usually, we play it safe and use some ground bison and then add some generic taco seasoning and cheese. However, one of our raving fans sent us this recipe to spice up Taco Tuesday and make it a more memorable experience!
We love the creativity of adding a sweet and tangy mango to a somewhat spicy and well seasoned bison tip. Not only is the recipe brilliant, but the photo is pretty beautiful as well!
Ingredients:
2 tablespoons Chopped Cilantro
Garlic
Lime juice from 2 limes
Salt/Pepper to taste
Mango
Half of one red bell pepper cut into 1/4 inch cubes
Quarter of one red onion cut into quarter inch cubes
1/4 cup corn
1/4 - 1/2 chopped jalapeño
1 tablespoon Vegetable oil
1/2 teaspoon cumin
1/2 teaspoon paprika
Bison steak (or ground bison)
Taco shell (hard or soft taco!)
Cheese (optional!)
Mango Salsa:
Cut one mango into quarter inch cubes and add it to a small bowl
Add the first lime's juice, cilantro, garlic, bell pepper, red onion, corn, and jalapeño to the bowl with the mangos
Stir and taste
Add salt and pepper as needed
Bison Tips:
In a pan, heat the pan medium-high and add vegetable oil until the pan sizzles when water is thrown on it.
Add bison tips and stir
Add salt, pepper, cumin, and paprika to bison tips and stir
Add the second lime's juice and stir until tenderloins are completed
Add to taco shell with cheese if desired, and drizzle mango salsa over top
